Fruity Pistachio
Cous Cous
Preparation Time: 5 minutes
Cooking Time: 35 minutes
Serves: 4
Ingredients:
- 3 tbs/45ml of Raspberry Vinegar
- 8oz/225g of Cous Cous
- 3oz/75g of Dried Apricots
- 3oz/75g of Dried Prunes, stoned
- 3oz/75g of Dates, stoned & chopped
- 2oz/50g of Shelled Pistachio Nuts
- 2oz/50g of Butter, cut into cubes
- 1tbs of Freshly Chopped Mint
Method:
- Heat oven to Gas Mark 7/220C/425F.
- Cover the cous cous in a bowl with an equal volume of warm water or as per packet instructions.
- Stir occasionally until the grains have absorbed all the water, which will take about 15 minutes.
- Cut the apricots and prunes into quarters.
- Drain any excess water from the cous cous then rub through your fingers to smooth out any lumps.
- Toss the fruit and nuts into the cous cous and transfer to an oven proof dish.
- Cover and bake in the oven for 20 minutes.
- Fluff up the cous cous with a fork and stir in the raspberry vinegar, butter and mint.
- Serve either warm or cold.
Suggestions:
The fruit specified can be replaced with any alternative dried fruits such as Raisins and Sultanas.

Organic on a budget:
The UK Government has committed in law to cutting the country’s greenhouse emissions 80% by 2050. And with our industrialised food and farming system currently responsible for around 30% of UK emissions it’s clear that we need to make fundamental changes to way we grow and eat our food. Only radical changes to our diets and farming systems can achieve the level of greenhouse gas cuts needed. And some of these changes can be made the next time you shop. Buying organic food and supporting organic farming, alongside a shift to less and mainly grass-fed meat and dairy products, with more seasonal fruit and vegetables should be the first step for anyone who takes climate change seriously.
Unfortunately many people, even those who in other areas of their lives consider themselves green, are happy to ignore the climate impact of their weekly non-organic shopping, and continue to buy the ‘cheapest’ possible food available at the check-outs, regardless of the environmental and social costs that we all end up paying eventually.
The Soil Association believes it is possible for most of us to shop and cook organically without compromising on quality. It might require some creativity and life-style changes, but these changes have the potential to leave both you and the planet healthier and happier. So use the following tips to stay healthy, ethical and green whilst saving money.
- Sign-up to an organic box scheme. Get local, seasonal and organic fruit and veg delivered straight to your doorstep, and get excellent value for money while you’re at it. Use the box scheme directory to find your local supplier.

- Cook fresh fruit and veg from scratch. Avoiding over packaged convenience foods is usually both healthier and cheaper. There are some seasonal recipe ideas on the Soil Association website, or try their new Grown in Britain cookbook which has a comprehensive guide to seasonal British produce.
- Eat less meat, and when you do try lower cost cuts such as belly of pork or neck of lamb. Offal too can provide tasty nutritious meals. Get friendly with your local butcher for advice on cuts.
- Cook in bulk. Make meals in larger batches, use herbs and spices, and cheaper ingredients like tinned tomatoes or beans and pulses to bulk things out, and then freeze left over portions. This is a great way of making less into more
- Join or create an organic buying group. Bulk-buy your store cupboard staples with a group of friends at wholesale prices. The Soil Association are working to encourage more buying groups around the country and have produced a guide to getting started:
- Setting up an organic buying group
- Join or start your own local Community Supported Agriculture (CSA) scheme in partnership with a local farmer. CSA is a partnership between farmers and the public where you make an annual investment for a share of the harvest and can prove great value for money

- Grow your own, for the freshest, most local food you can get, right on your doorstep – and free
- Organic growing advice
- Keep your own chickens and enjoy a great house pet and super fresh eggs every day. You can learn more about chicken keeping, and range of other courses on growing and cooking, through a Soil Association Organic Farm School course, supported by the Daylesford Foundation

- Write a shopping list. As a nation we we throw away 6.7 million tonnes of food every year. By planning meals in advance, buying what you need and not what you ‘fancy’, and using left-overs you should be able avoid the need to throw away any food at all, and save up to £50 a month

Not Just Nut Roast
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 4-6
Ingredients:
• 1 medium onion
• 1oz/28g margarine
• 8oz/225g nuts, hazel, walnut pecan. Mix as you wish.
• 4oz/200g bread, wholemeal or white (Slightly dry bread is fine)
• ½ Pint/300ml vegetable stock
• 1 glass of red wine added to the stock will give a rich sauce (optional)
• 2 tsp/10ml of yeast extract
• 1tsp/5ml of mixed herbs or fresh parsley, basil, and oregano to taste (roughly a
meagre handful)
• Salt (if using) and pepper to taste
Method:
• Chop the onion and fry in the margarine until soft – we like them slightly coloured to
give them more of a crunch!
• Blend the nuts and bread in a liquidizer to a fine breadcrumb look. If you don’t have a
liquidizer, grate the bread, and bash the nuts with a rolling pin/ tin of beans. Cover
the nuts with a tea towel or you may need to deep clean the kitchen and yourself!
• Mix the stock and yeast extract in boiling water. If using the wine, add it to a slightly
cooled stock.
• Stir everything together and pour into a shallow baking dish or a loaf tin which has
been lightly greased (it should be slightly gooey, but not runny wet).
• Sprinkle with a scattering of breadcrumbs – you could add cheese to this for a
change!
• Bake at Gas Mark 4/350f/175c for 30 mins.
Serving Suggestions:
Accompany with roast vegetables or could be eaten cold the following day with green salad
and oven roast potato wedges.
For Pudding:
The above Nut Roast recipe is rich and filling, so a simple pudding such as fresh fruit could
be enough. However, a light but delicious pud would be Greek yogurt with Not Just Nuts
Organic Apple Rings or Not Just Nuts Organic Blueberries added.
